- 1 cup brown sugar
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon smoked paprika
- 1 teaspoon salt and pepper
- 3 pounds pork belly
- 1/4 cup maple syrup
- 1/4 cup honey
- 5 knobs butter
Start making the rub by combining 1 cup brown sugar with 1 tablespoon garlic powder, 1 tablespoon onion powder, and 1 tablespoon smoked paprika along with 1 teaspoon of salt and pepper.
Carefully slice the skin off a 3 pound pork belly and then cut it into 1 inch cubes. Thoroughly coat the pork belly in the brown sugar rub then place them on a wire rack on top of a baking tray. Bake the pork belly in a 275°F oven for 3 hours.
After the first bake, add the cooked pork belly to a bowl and drizzle 1/4 cup of maple syrup and 1/4 cup of honey. Toss it all together.
Place the pork belly in a parchment paper lined cake pan and add about 5 knobs of butter. Cover and cook for an additional 30 minutes.
