Barbacoa Beef – Because Tacos Are Always Good:
If you don’t know me, I love tacos. I could basically eat tacos every day. This Barbacoa Beef recipe makes some of the most delicious tacos. Your family will absolutely love this recipe. Not to mention, it tastes like you worked so hard when in reality this is a super easy recipe. This is also a great recipe if you are having friends or family over. But if it is just you even better as this Barbacoa Beef makes for wonderful leftovers, too.
It’s nearing summer and no one wants to heat up the kitchen. But standing over a hot grill may not sound so great either. So grab that crockpot and let’s make some Barbacoa Beef instead. Even the novice cook will find this recipe to be super easy.
Instructions
Mix together the chipotle peppers and their sauce, cilantro, red onion, garlic, glove, salt, lime juice, and apple cider vinegar in the crockpot. If you prefer you can pulse all of these ingredients in a food processor, but it is not necessary.
Place the brisket on top of the mixture. Add beef stock to cover the meat and place the bay leaves on top.
Place the lid on the crockpot. Cook for 8-10 hours on low. Remove meat from crockpot and shred with forks.
If you need to keep it warm, strain the liquid from the crockpot. Put the beef and the broth back in the crockpot on warm.
The Barbacoa Beef is good to eat so many ways. Like I mentioned, I’m a bit of a taco fanatic and I love the street taco size. So get your favorite toppings together. Here are some of my favorites:
- Lettuce
- Tomatoes
- Pico De Gallo
- Shredded Monterey Jack Cheese
- Sour Cream
