  • 2 pound Beef Brisket ; fat trimmed
  • 1 teaspoon Black Pepper
  • 2-1/2 teaspoons Kosher Salt ; divided
  • 2 Bay Leaves
  • 2 tablespoons Worcestershire Sauce
  • 2/3 cup Water
  • 2 tablespoons Water
  • 1 pound Sweet Onions ; cut into 1/2″ rings (2 onions)
  • 2/3 cup Red Wine Vinegar
  • 2 tablespoons Sugar
  • 2 Whole Cloves
  • 1-1/2 cups Red Onions ; verticially sliced
