Ingredients:

  • 1 medium eggplant
  • 4 tablespoons extra-virgin olive oil, divided and more for serving, if desired
  • 1/3 cup tahini
  • 1/3 cup Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon Kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon cayenne pepper
  • Chopped fresh parsley, for garnish (optional)
  • Chopped and toasted walnuts, for garnish (optional)
