What is a Texas Twinkie? 

This popular appetizer is basically a jalapeno popper with a southern twist. Also known as Texas Torpedos, they are usually large jalapenos that have been hollowed out and had the seeds removed to bring down the spice level.

Then, you stuff the pepper with cream cheese and shredded brisket. The final step is to wrap the jalapeno in bacon.

You can also brush it with barbecue sauce before cooking if desired. Some variations use pimento cheese instead of cream cheese, but no matter what you use, the combination is delicious. 

The final product can be cooked either in your smoker or in the oven. In this post we’re going to show you how to make these at home to enjoy with your family.

This can also be done in your air fryer as well. Just cook until the bacon is the desired crispiness. 

Easy Texas Twinkies Recipe

Here’s what you will need for this recipe:

  • 8 large jalapenos (You will want to slice and remove seeds as shown below)
  • 8 slices of bacon (uncooked thick cut bacon is best for this recipe) 
  • 12 tablespoons of softened, room temperature cream cheese 
  • 2 cups of smoked brisket (either chopped or shredded) 
  • Barbecue sauce (optional)

There are lots of different ways to make this easy appetizer recipe. Feel free to add Monterey Jack or Pepper Jack cheese, or to swap out the brisket with pulled pork.

You can also brush the poppers with barbecue sauce before cooking, or if you prefer, serve the barbecue sauce (or another sauce) for dipping.

To get started in this Texas Twinkies recipe, you will want to prepare your jalapenos.

For this particular recipe, think about the slogan that everything is bigger in Texas! When buying your jalapenos at the grocery store, buy the biggest ones you can find.

When preparing the jalapenos, you may want to wear gloves to keep the oil off your hands.

Use a sharp pairing knife to chop off the top of the jalapeno.  Next, you will want to cut down the back of the jalapeno (this is usually the flatter part). Use your fingers and carefully open the jalapeno.

After the jalapeno is open, you will want to de-seed it. This removes the heat. To leave the jalapeno a little on the spicy side, leave the white rib area and just remove the seeds.

Once they are removed, rinse the jalapenos extremely well under water. You will want to be sure to clean them well and to rinse the seeds out. If desired, use a clean dish towel to pat them dry.

For the next step, you’re going to stuff the peppers. Use a knife and start adding cream cheese to the jalapenos.

You’ll want to be generous with the cream cheese since this is what helps everything stick together.

After stuffing the jalapenos, you will add the brisket. Stuff each of the jalapenos with your chopped or shredded brisket.

Lay out one slice of the bacon on a flat surface such as a cutting board or cookie sheet

Start at one side and use a toothpick to secure the end of the bacon strip to your stuffed jalapeno.

Wrap the bacon around the pepper and secure the final end with a toothpick. Repeat this wrapping process for each jalapeno.

How to Make Texas Twinkies in the Oven

To make this recipe in the oven, preheat to 400 while preparing everything. Place the jalapenos wrapped in bacon on a baking sheet.

For the best results you’ll want to place them on a wire rack that has been placed on the cookie sheet to allow them to cook.

This way they will bake thoroughly, allow the bacon to crisp and then catch the drippings. Bake for 20-30 minutes or until the bacon is completely cooked. 

How to Make Texas Twinkies in a Smoker

To make this recipe in your smoker, preheat it to 275°. Place the jalapenos on the wire rack and cook for 60 to 90 minutes, or until your bacon is  completely cooked.
