Ingredients:

  • 6 pounds (2,75kg) beef brisket
  • kosher or sea salt
  • 2 teaspoons flour
  • 3 tablespoons olive or vegetable oil
  • 8 medium onions, peeled and sliced
  • freshly-ground black pepper
  • 3 tablespoons tomato paste
  • 4 cloves garlic (peeled and thinly sliced)
  • 1 tablespoon fish sauce ((optional))
  • 1 carrot (peeled and diced)
